  • brown rice: ¼ cup(s), (50g)
  • baby spinach leaves: 100 g
  • egg(s): 6 medium
  • carrot(s): 1 medium, coarsely grated
  • zucchini: 1 medium, coarsely grated
  • low fat cottage cheese: ⅓ cup(s), (80g)
  • cherry tomato: 120 g, halved

  1. Place rice and ½ cup (125ml) water in a small saucepan over high heat. Bring to the boil. Reduce heat and simmer, covered, for 25 minutes or until rice is just tender.

Dollop cottage cheese over the top. Use the back of a spoon to lightly press cheese into egg mixture. Bake for 30–35 minutes or until golden and set.
  4. Cut into slices and serve topped with tomatoes and mint. Serve.

TIP: Store slice in an airtight container in the fridge for up to 4 days. SERVING SUGGESTION: Wholemeal toast spread with mashed avocado.
